Gonna wait on this until there's proof that old 680 and 3680 have been switched in the field (KYTC maps show that this is their intention). Once I can obtain a suitable vehicle to finally clinch 1758 & 1679, I'll check it out myself if no one else has confirmed it yet.

Went exploring anyway since I have no AWD options at the moment. Both the new and old routings of 680 still had 680 signs as of November 5. KYTC documents show 680 and 3680 switching places in the affected area, with 3680 not concurrent with 122 or 979. The short stub of old 680 north of 979 seems to have been redesignated as an extension of nearby 3379, but again there was no evidence of the extension in the field. https://github.com/TravelMapping/HighwayData/pull/7003 makes changes per KYTC documents, which a KYTC district rep told me he expected to be reflected in field signage eventually.
